Sweet and Spicy Rainbow Salad

Rainbow Beet Salad

 Ingredients (serves 2):

–          2 to 3 medium carrots

–          1 apple

–          2 handfuls of Micro Rainbow Beet


–          1 tbsp sunflower seeds

–          1 bloody orange, juiced

–          ½ lemon, juiced

–          a pinch of black pepper

–          a pinch of chilli flakes

Soak the sunflower seeds for about 1 hour.

Peel and julienne the carrots, do the same with the apple. Drain the sunflower seeds and place in a blender along with the lemon and the orange juice, the ground pepper and the chilli flakes. Blend well. Pour the dressing over the carrot and apple strip.

Add the Micro Rainbow Beet, toss well and serve.

P.S.:Letting this salad sit for a bit will make it hotter.
