– 2 cups or 330g of chickpeas, cooked or canned
– some cherry tomatoes
– ½ lemon, juiced
– ½ avocado
– 1 to 2 handfuls of Micro Rocket
Place the avocado flesh in a glass bowl and mash well with a fork. Quarter the cherry tomatoes and add them to the bowl. Add the drained chickpeas and the lemon juice. Mix everything before adding the Micro Rocket and tossing well again. Serve.
