Quinoa Salad with Broccoli

Quinoa with Broccoli

Ingredients (serves 2):

–          1 ½ cup or 250g quinoa

–          some cherry tomatoes

–          2 handfuls of Micro Broccoli

Sauce (serves 2):

–          ⅓ to ½ avocado

–          ½ lemon, juiced

–          1 clove garlic

–          1 tsp chopped ginger

–          water as required to thin the sauce

Set water to boil and cook the quinoa. Quarter the cherry tomatoes. Place the sauce ingredients in a small blender and blend until smooth – add water as needed. Drain the cooked quinoa, mix well with the sauce, add the Micro Broccoli and serve.
