Greenish Stir-Fry

Ingredients (serves 2):

–          1 ½ cup or 280g rice

–          3 handfuls of Fiji Feather Pea Shoots

–          1 tsp coconut oil

–          2 cloves of garlic

–          1 ½ tbsp soy sauce

–          2 ½ tbsp water

–          1 tbsp sesame seeds

Set water to boil and cook the rice.

Combine the soy sauce with water in a glass and set aside.

Sauté the garlic on coconut oil until golden brown. Add the Fiji Feather Pea Shoots and toss gently. Cover and cook for 1 minute over low flame to lightly steam the pea shoots. Add the thinned-down soy sauce and set off the stove in a few seconds.

Serve over cooked rice, sprinkled with sesame seeds.
