Crostini with Micro Chives

Ingredients (makes 3 slices):

–          3 slices sourdough bread or ciabatta

–          1 handful Micro Chives

–          ½ yellow capsicum

–          ½ avocado

–          3 tomatoes

Wash the tomatoes. Cut one into thick slices and bake in the oven at 170C for 40 minutes. Chop the remaining tomatoes and the capsicum into small pieces, do the same with the baked tomato and toss everything well with your hands.

Thinly slice the avocado. Lightly grill the bread slices in a dry pan. Place 3 slices of avocado on each, topped with the tomato and capsicum mixture and sprinkle generously with Micro Chives before serving.
